White Bean Chicken Avocado Lime Soup
The other day I didn’t feel like seriously cooking, but I had a kitchen full of fresh ingredients I didn’t want to go bad so I decided to make a soup. Low sodium chicken broth, fresh garlic, yellow onions, green onions, tomatoes, cilantro, lime juice, lime zest, white beans, chicken breast, && spices tailored and tweaked to my liking were all thrown into a pot and simmered on low to medium heat for a few hours and a simple, yet delicious and fulfilling meal.
It’s that time of the year again...crawfish season!
I’m just a little bit obsessed with ahi tuna && crispy french fries. Just a little late night hype.
Pizza Forever
I guess it’s pretty safe to say that pizza is usually my go to, when I want to make something quick but exquisite. The best thing about pizza is that you can put anything on it and not have to worry too much about how it tastes. Since I pretty much perfected my BBQ Chicken Pizza and Vegetable Pizza, I figured I try my hand at something new: crab pizza with arugula, sundried tomatoes, red onions, portobello mushrooms, smoked gouda, mozzarella, topped with old bay and truffle oil on a cauliflower crust…just yum. Can’t wait to make this baby again.
Vegetarian Tacos
…that’s what happens when you go to the grocery store for taco night and forget to buy the freaking meat! After this realization, I was too lazy to get back in my car so I opted for the vegetarian alternative with portobello mushrooms. I cooked the mushrooms covered on a low heat with sliced onions, freshly chopped garlic, and McCormick’s original taco seasoning. Once the the mushrooms were cooked, I removed the lid and turned the fire all the way up (well, medium-high).
The composition of these delicious tacos is as follows: on a flour tortilla, i put refried pinto beans, refried black beans and topped it with a little shredded Mexican cheese. I put them in the oven just long enough for the cheese to melt. Once the cheese was melted and gooey, I continued with the mushroom and onion mixture, fresh shredded cabbage, pico de gallo, avocados, fresh cilantro, && a little lime juice.
I must say, the flavor was immaculate and I didn’t miss the meat one bit.

A lot of my dinners have been very impromptu lately, but I will say, the unpredictableness has made for a few delicious meals. This time I conjured up baked barbeque parmesan chicken breast on a bread of baked asparagus, topped with sauteed onions && mushrooms with a side of smoked garlic and rosemary mashed potatoes.

To know me is to know my very serious obsession with smoked salmon. Once you’ve tasted fresh smoked salmon, I swear there’s nothing better.There’s various ways to enjoy smoked salmon and I this was one of the best combinations thus far.
On a hot slice of toasted 100% whole wheat bread, I spread a layer of whipped chive flavored cream cheese and fresh rosemary then topped it with a couple layers of Alaskan smoked salmon, a homemade red wine onion jam (my little personal experiment), caviar, && a little more rosemary. Oh my goodness…words can not explain how delicious this smoked salmon toast was! I’ve been eating this for breakfast for the past four days! Not to mention, the cranberry citrus kale salad paired perfectly!
What a delicious breakfast!
