Roast Lamb Shawarma
The great thing about leftover Sunday Roast -whether it’s Beef, Chicken, or Lamb) - is that you can turn it into an all new but equally delicious dish. One of the great things about Toronto (among many other), is the good and tasty shawarma availability. There’s a shop basically at every corner, and if you live in the city, you’ll never be hungry. When I lived in Leslieville, my favorite spot was Liberty Shawarma at Queen and Broadview, where the portions are as generous as the owners, and the food, really, really good! My Roast Lamb Shawarma is also really good. Try it, if you’re not in Toronto!
Ingredients (serves 2, or 1 hungry):
1 large Dürüm or Flour Tortilla
1/2 tablespoon olive oil
8 ounces leftover Roast Lamb
1/2 teaspoon ground sumac
1/2 teaspoon ground coriander
1/4 teaspoon dried thyme
1/4 teaspoon toasted sesame seeds
1 teaspoon honey
1/2 tablespoon chopped fresh parsley
1 heaped tablespoon smooth Hummus
a few lettuce leaves
1 small tommato, cut into thin slices
With a wet paper towle, lightly dampen Tortilla. Place in the oven, and heat at 400°, 6 minutes.
Meanwhile heat olive oil in a medium nonstick skillet over medium-high heat. Chop leftover Roast Lamb roughly and add to the skillet. Sauté, 2 minutes. Add sumac, coriander, thyme and sesame seeds, and sauté, shaking the pan, 1 minute more. Stir in honey, cook, 1 minute. Remove from heat and stir in chopped parsley.
Spread Hummus evenly onto Tortilla. Arrange lettuce leaves and tomato slices in a line close to one side. Top with sizzling lamb and roll carefully and tightly. Cut in half.
Serve Roast Lamb Shawarma immeduiately with more lettuce, tomato, and Hummus, if desired.
Nuba in Gastown, 207 W Hastings St, Vancouver (Gastown), BC V6B 1K6, Canada
Nuba was Mr. Froyo’s favorite restaurant during our trip to Vancouver. Mine was a tie between Jang Mo Jib and Nuba. The ambiance of Nuba was more inviting. It’s downstairs (underground), warm and dark, with Lebanese (?) music playing. It had a cave-like feel with a long bar and candles at every table.
The menu included cold mezze (e.g., hummus, baba ghanouj), hot mezze (e.g., falafel, kabobs), soups, salads, mains, sampling platters, add-ons, desserts, and beverages. The food is prepared with fresh ingredients, local and organic when available, and all the meats are halal.
Pulled lamb shawarma ($32.95 CAD): braised lamb leg & shoulder served with batata harra, housemade pita bread, and Urfa pickles. I was skeptical about braising shawarma but now I wonder why others don’t do it. The braised lamb shawarma was much juicier than your typical shawarma and it had all those warm shawarma spices. Amazing. Five stars. The warm pita bread squares were soft and chewy. I made little shawarma wraps, adding some of the creamy tahini sauce (scrumptious) and crunchy house pickles. The Lebanese roasted potatoes were so soft and flavorful. They weren’t crispy but honestly, I don’t care because they were so addictive.
Vegan kibbeh ($24.95 CAD): sweet potato & quinoa kibbeh (cutlets) stuffed with caramelized onions and lentils, served on a bean puree, drizzled with pomegranate molasses, with a green side salad and pita bread. The three kibbeh were on the small side and the green salad with carrots and a slice of tomato was boring (why not offer tabbouleh or Fattoush salad). The cutlets were soft and lightly crisped on the outside. Mr. Froyo thought the kibbeh were good but he didn’t feel they needed the sweet pomegranate molasses. Because they provided a lot of pita bread, he felt satisfied by the meal.
The service was very friendly. He checked in on us multiple times and provided helpful suggestions.
