Ingredients: 1 cup fresh strawberries, hulled and sliced. 1 cup coconut milk. 1/2 cup plain yogurt. 2 tablespoons honey or maple syrup. 1/2 teaspoon vanilla extract. Ice cubes optional. Fresh mint leaves for garnish optional.
Instructions: In a blender, combine the fresh strawberries, coconut milk, plain yogurt, honey or maple syrup, and vanilla extract. If you prefer a thicker consistency, you can add some ice cubes to the blender as well. Blend all the ingredients until smooth and creamy. Taste the lassi and adjust the sweetness if necessary by adding more honey or maple syrup. Pour the Strawberry-Coconut Lassi into glasses. Garnish with fresh mint leaves if desired. Serve chilled and enjoy!
