There's nothing better than these crispy potato latkes for breakfast, brunch, or as a side dish. Putting together grated potatoes and onions that have been fried until golden makes a dish that is both tasty and filling.
Ingredients: 4 large potatoes, peeled and grated. 1 onion, grated. 2 eggs. 1/4 cup all-purpose flour. 1 teaspoon salt. 1/4 teaspoon black pepper. Vegetable oil for frying.
Instructions: Grate the potatoes and put them in a clean kitchen towel. Squeeze out as much water as you can. Grate the potatoes and onion and mix them with the eggs, flour, salt, and black pepper in a large bowl. Combine well. Warm up the vegetable oil in a big pan over medium-low heat. Put spoonfuls of the potato mix into the hot oil and gently press them down to make pancakes. It should take about 34 minutes per side to fry until golden brown and crispy. Take it out of the pan and let it drain on paper towels. If you want, you can serve it hot with applesauce or sour cream.
