I’ve finally ordered my stash of peas and beans to last the next month or two plus I haven’t had lentils in ages! I’ve mentioned before that I always sprout peas and beans before cooking them for much easier digestion (read: no gassy aftermath). If you look closely you can see the little “tails” still attached lol. Feel free to message me if you need details on sprouting but here’s a quick Lentil Stew recipe (though not a very saucy looking one but a stew just the same 😊): . Lentil Stew . 150g or 2 cups cooked lentils (plus 1 cup/236ml cooking liquid or water) 2 tsps olive oil 1/2 a large carrot, diced 1/2 a large onion, minced 3-4 cloves minced garlic 1 tsp fresh thyme 1/2 tsp dried rosemary 1 bay leaf 1 tsp maple syrup (or your preferred sweetener) 5 grape tomatoes, cut in half All purpose seasoning, to taste Salt and pepper to taste 1/2 red bell pepper, diced Handful of fresh basil, chopped . - Heat oil in pot then add carrot and onion - Once browned, add garlic, sweetener, thyme, rosemary, bay leaf, tomatoes, all purpose seasoning, salt and pepper. - Allow sweetener to caramelize (darken a bit) then stir in lentils, adding more water if needed - Cover pot, lower heat and allow it to simmer for 5-8 mins. Being vegan isn't restrictive. So much goodness😍 steamed asparagus, pak Choy, carrot and broccoli, and baked potato, pumpkin, Spanish onion, tomatoes, and capsicum. Never gets old. A quick and easy vegan pasta recipe perfect for lazy foodies. Bursting with flavor from fresh cherry tomatoes and basil, this dish is sure to satisfy your cravings without all the effort.
Ingredients: 250g pasta of your choice. 2 cups cherry tomatoes, halved. 1 onion, thinly sliced. 3 cloves garlic, minced. 2 tablespoons olive oil. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste.
Instructions: Cook pasta according to package instructions. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add onion and garlic, saut until fragrant. Add cherry tomatoes, cook until they start to soften, about 5 minutes. Toss in cooked pasta, basil leaves, salt, and pepper. Mix until well combined and heated through. Serve hot, garnished with additional basil leaves if desired.
