Peanut Noodle Salad . Is there anything better than noodles? I’ll take them in any form: Italian pasta, Asian noodles, Indo-Chinese noodles, macaroni and cheese (vegan, of course), and the list goes on and on. These are all hot and wonderful but which do you choose on a blistering hot, summer day in Atlanta? None. You go with this peanut noodle salad because it’s supposed to be cold and that’s what we love. But don’t get me wrong; just because we want it cold doesn’t mean we don’t want it spicy. I’ve packed this full of flavor and spice with sriracha, red chili flakes, and black pepper. And let’s not forget the delicious medley of fresh veggies and crushed peanuts that add that perfect crunch to this dish. What about the fresh squeeze of lime?
