A nutritious and flavorful Italian wedding soup made with lean turkey meatballs, whole wheat pasta, and plenty of vegetables, perfect for the 21 Day Fix meal plan.
Ingredients: 1 lb lean ground turkey. 1/4 cup whole wheat breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1 egg. 1/2 tsp garlic powder. 1/2 tsp onion powder. 8 cups low-sodium chicken broth. 1 cup uncooked whole wheat pasta small shape. 2 cups chopped kale. 1/2 cup diced carrots. 1/2 cup diced celery. Salt and pepper to taste.
Instructions: In a bowl, mix together ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, and onion powder. Form the mixture into small meatballs. In a slow cooker, combine chicken broth, pasta, kale, carrots, celery, and meatballs. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until meatballs are cooked through and vegetables are tender. Season with salt and pepper to taste before serving.
