Ingredients: 1 tablespoon olive oil. 2 leeks, thinly sliced. 3 cloves garlic, minced. 8 ounces bucatini pasta. 3 cups vegetable broth. 1 lemon, zest and juice. Salt and pepper to taste. Grated Parmesan cheese for serving. Fresh parsley, chopped, for garnish.
Instructions: Heat olive oil in a large skillet over medium heat. Add sliced leeks and minced garlic, saut until softened, about 5 minutes. Add bucatini pasta to the skillet, pour in vegetable broth, lemon zest, and lemon juice. Season with salt and pepper to taste.
