Leftover Lunch
Healthy Eating Day 4
It's my Sunday
I've been feeling horribly guilty about my lack of productivity today... Until I realised I slept later than this yesterday.
"having the best leftover lunch ever! : tuna with eggs, coleslaw, apples , and popcorn with water..... ha ha ha ha the struggle is real son!"

Worldwide 50% of the food that is produced is wasted
Now i was aware of the fact that a lot of food gets chucked out.
But 50% is an awful lot of waste. So since I read that I've always wanted to share this fact on here and show one of my leftover lunch recipes
1. i had leftover baked vegetables (sweet and normal potato, carrots with a splash of olive oil and favorite spices popped in the oven for 30-45 min) in the fridge from yesterdays dinner
2. then i cooked some broccoli (leftover) and tossed it with the cold leftover vegetables, so that it would all get equally warm, but not hot
3. then i added some avocado, salt, pepper and balsamic vinegar
4. also from yesterday we had some leftover lamb's lettuce (gosh i love the english name) and but some leftover tzatziki and pesto on top of it, you can easily substitute it for hummus to make it a vegan lunch.
5. and that's it really
Almost everything was leftover and it was delicious and quick! You could also use this as a to-go-lunch!
What I'm trying to say is that you can make so many delicious meals out of leftovers and you can experiment and play with food combinations!
Leftover doesn't mean old and unenjoyable!!!

Kip kerrie met stukjes bloemkool overgebleven van het avondeten, heerlijk! Met stukjes bloemkool als rijst/pasta vervanger. Stukjes bloemkool rauw door de saus gedaan, tijdens het opwarmen worden die dan precies gaar :)
Weer leftovers maar deze keer van een avondmaal dat ik zelf heb bereid en bedacht:
Runderreepjes met boerenkool (boerenkool is dus veel lekkerder wanneer je het licht bakt dan wanneer je het kookt!) samen met champignons, een uitje, ruime kerrie en kurkumin, teentje knoflook en een paar eetlepels Griekse yoghurt even bakken.
Als snack had ik nog een appel en een manderijn.
