If you have extra mashed potatoes, these ham mashed potato cakes are a great way to use them up. The outside is crunchy and the inside is soft. They taste great with ham and cheese.
Ingredients: 2 cups mashed potatoes. 1 cup diced ham. 1/2 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup breadcrumbs. 1 egg, beaten. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large bowl, combine mashed potatoes, diced ham, shredded cheddar cheese, chopped green onions, breadcrumbs, beaten egg, salt, and pepper. Mix until well combined. Divide the mixture into equal portions and shape them into patties. Heat olive oil in a skillet over medium heat. Cook the potato cakes in the skillet for about 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and drain on paper towels. Serve hot with your favorite dipping sauce or enjoy them as is.
