This sandwich has a great mix of flavors and textures thanks to the shredded turkey, dried cranberries, crunchy pecans, and creamy dressing. It's a great way to eat lunch or dinner with turkey that you have left over.
Ingredients: 1/2 cup cooked turkey breast, shredded. 1/4 cup dried cranberries. 2 tablespoons chopped pecans. 1/4 cup celery, finely chopped. 1/4 cup red onion, finely chopped. 1/4 cup mayonnaise. 1/4 cup cream cheese, softened. 1 tablespoon Dijon mustard. Salt and pepper, to taste. 4 slices sandwich bread. Lettuce leaves, for serving.
Instructions: In a bowl, mix together shredded turkey, dried cranberries, chopped pecans, celery, and red onion. In another bowl, combine mayonnaise, cream cheese, Dijon mustard, salt, and pepper. Mix until well combined. Add the mayonnaise mixture to the turkey mixture. Stir until evenly coated. Toast the sandwich bread slices lightly, if desired. Spread the turkey salad mixture evenly onto 2 slices of bread. Top with lettuce leaves and the remaining bread slices. Slice the sandwiches in half and serve.
