Roast lamb, raised by our former egg lady up by our former cabin. We hadn’t decided to sell the cabin back when we agreed to participate in a lamb share. So you can imagine how thrilled I was to have to drive 7 hours round trip to pick it up. Truth be told, my fate was better than the lamb’s so I guess I shouldn’t complain. And raising heirloom breeds two pregnant sheep at a Time is barely (if at all) profitable for this mother-daughter-granddaughter operation. Still, it’s good to participate in the non-cliche end of the farm to fork movement, support local, micro-scale agriculture, and have delicious, trustworthy food on our table. This lamb leg was absolutely shreddable and the peppercorn gravy I served as a slider condiment took it over the top for my 8yo. He was blissed out and ate so much. Ingredients: 1 leg of lamb about 4-5 lbs. 4 cloves garlic, minced. 2 tablespoons fresh rosemary, chopped. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat the rotisserie grill to medium-high heat. In a small bowl, mix together minced garlic, chopped rosemary, olive oil, salt, and pepper to form a paste. Using a sharp knife, make small incisions all over the leg of lamb. Rub the garlic-rosemary paste all over the lamb, ensuring it's evenly coated. Secure the lamb onto the rotisserie spit and place it on the grill. Cook the lamb for about 1.5 to 2 hours, or until the internal temperature reaches 145F for medium-rare or 160F for medium. Once cooked to your desired doneness, remove the lamb from the grill and let it rest for 10-15 minutes before slicing. Slice the lamb and serve hot.
