Lemon-almond cookie brittle that's crisp and fragrant, perfect for snacking or gifting.
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 teaspoon almond extract. 2 cups all-purpose flour. Zest of 1 lemon. 1/2 cup sliced almonds.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, cream together butter and sugar until light and fluffy. Add almond extract and lemon zest, mix well. Gradually add flour and mix until just combined. Press the dough evenly onto the prepared baking sheet. Sprinkle sliced almonds over the dough and gently press them in. Bake for 18-20 minutes, or until the edges are golden brown. Remove from the oven and let it cool on the baking sheet. Once cooled, break the cookie into pieces and enjoy!
