Ingredients: 1 can chickpeas, drained and rinsed. 1/2 cup chopped fresh parsley. 1/4 cup chopped red onion. 2 cloves garlic, minced. 2 tablespoons chickpea flour. 1 teaspoon ground cumin. 1/2 teaspoon ground coriander. 1/4 teaspoon cayenne pepper. Salt and pepper to taste. 2 tablespoons olive oil. Lettuce leaves, tomato slices, sliced cucumber, for serving.
Instructions: In a food processor, combine chickpeas, parsley, red onion, garlic, chickpea flour, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until mixture is well combined but still slightly chunky. Form the mixture into patties, about 1/4 cup each. Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and crispy. Serve the falafel patties on lettuce leaves with tomato slices and sliced cucumber.
