A dish with mushrooms and tempeh that are marinated in a lemon-Dijon sauce and then baked until they are done. This recipe tastes great and is good for you.
Ingredients: 1 package tempeh, cubed. 8 oz mushrooms, sliced. 2 tbsp olive oil. 2 tbsp soy sauce. 2 tbsp Dijon mustard. 1 lemon, juiced. 2 cloves garlic, minced. Salt and pepper, to taste. Fresh parsley, chopped for garnish.
Instructions: Preheat oven to 400F 200C. In a small bowl, whisk together olive oil, soy sauce, Dijon mustard, lemon juice, garlic, salt, and pepper. In a large bowl, combine tempeh and mushrooms. Pour the marinade over them and toss to coat evenly. Spread the tempeh and mushrooms in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until tempeh is golden brown and mushrooms are tender, stirring halfway through. Remove from oven and let cool slightly. Garnish with fresh parsley before serving.
