Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1/4 cup mascarpone cheese. 1 egg. 1 lemon zest and juice. 1 tablespoon melted butter. Cooking oil or butter for frying.
Instructions: Whisk the flour, sugar, baking powder, baking soda, and salt together in a bowl. Beat the egg, mascarpone cheese, buttermilk, lemon zest, and lemon juice together in a different bowl. Put the wet and dry ingredients together and mix them just until they are mixed. Don't mix it too much; a few lumps are okay. Put a skillet or griddle over medium-high heat and add a little cooking oil or butter to coat it. Each pancake needs a ladleful of pancake batter added to a hot skillet. Once the pancakes start to bubble on top, flip them over and cook the other side until it's golden brown. Top it off with fresh berries, maple syrup, or more mascarpone cheese if you like.
