Here’s my Hailey‑inspired pizza brunch toast, tweaked to sit around 450 calories 👇
Ingredients – serves 1 (≈450 kcal)
• 1 medium slice wholemeal/seeded sourdough (about 40 g / 1.4 oz)
• ½ tsp butter or olive spread (2–3 g)
• ½ tsp truffle oil (optional, keeps the “celeb” vibe)
• 1 medium ripe tomato, thinly sliced
• 1 tsp extra‑virgin olive oil (5 ml)
• Pinch salt + dried oregano/Italian herbs
• 30 g burrata or fresh mozzarella, torn (just over 1 oz)
• 2 tbsp marinara or herby passata (about 30 ml)
• 1 tbsp finely grated parmesan (about 5 g)
• 1 medium egg (poached or fried in spray oil)
• Small handful rocket or fresh basil
• Pinch dried oregano + pinch chilli flakes
1️⃣ Slice the tomato and toss with olive oil, lemon, salt and a pinch of oregano. Let it sit while you prep the toast.
2️⃣ Lightly spread both sides of the sourdough with the butter/olive spread, drizzle one side with the truffle oil and a tiny pinch of salt. Pan‑toast on medium heat until both sides are golden and crisp.
3️⃣ Move the toast to a small baking tray. Tear over the burrata/mozzarella, then lay the marinated tomato slices on top and drizzle over any leftover marinade.
4️⃣ Grill (broil) at about 180–200 °C / 350–400 °F for a few minutes, until the cheese is soft and the toast edges are extra crisp.
5️⃣ Warm the marinara/passata and spoon it over the toast. Sprinkle with parmesan, a little more oregano and chilli flakes, then pop back under the grill for 1–2 minutes.
6️⃣ Cook your egg (I like it poached with a runny yolk) and pop it on top. Finish with rocket or basil. Slice in for that yolk‑porn moment 🤤
