Tiramisu with Chocolate Sauce & Berries 🍫🍓
Hurricane Harvey didn't hit San Antonio too hard (Houston is getting blasted tho😕), but it DID cool off temperatures into the low 70s which is basically fall weather for us compared with the 100+ temps we've been experiencing for months. I was craving sweet potato pancakes all day yesterday, so today I whipped up these vegan beauties from @sweetpotatosoul and paired them with veggie sausage links from @amyskitchen. These pancakes have such a perfect sweet and spicy fall flavor🍂🍁, it makes me so happy. To really complete this lazy rainy Sunday morning, we are watching the new Duck Tales like the adult millennials we are. We all know they rebooted this show for us 😜. . . . . . . #whatveganseat #sundaymorning #breakfastofchampions #sweetpotatopancakes #wholefoodplantbased #forksoverknives #vegan #vegetarian #pancakeperfection #ducktales #adulting #hurricaneharvey #cleaneating #fueledbyplants #plantpowered #plantbaseddiet #lazymorning #sundaymorningvibes #lazyday #rainydaybreakfast
Chocolate Cake with Raspberry Glaze 🍰🍫
These buttermilk pancakes are a classic breakfast favorite. They are fluffy, tender, and perfect for a leisurely morning meal with your loved ones.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup buttermilk. 1/4 cup milk. 1 large egg. 2 tablespoons melted butter. 1 teaspoon vanilla extract.
Instructions: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, combine the buttermilk, milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Preheat a griddle or non-stick skillet over medium-high heat and lightly grease it with cooking spray or butter. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes or until they are golden brown and cooked through. Serve the buttermilk pancakes hot with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.

A pancake recipe that is both light and tasty, with the health benefits of quinoa and the fresh taste of summer squash. Ideal for a healthy and filling summer meal!
Ingredients: 1 cup cooked quinoa. 2 cups grated summer squash. 1/2 cup chickpea flour. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1/4 cup chopped fresh cilantro. 1 teaspoon ground cumin. 1/2 teaspoon baking powder. Salt and pepper to taste. 2 large eggs, beaten. 2 tablespoons olive oil.
Instructions: Put chickpea flour, chopped onion, minced garlic, cilantro, cumin, baking powder, salt, and pepper in a large bowl. Add the cooked quinoa and mix them all together. Add the beaten eggs and mix them in until everything is well combined. Set a pan on medium heat and add the olive oil. Make small pancakes with the quinoa mixture by spooning it onto the pan. Each pancake should be cooked for three to four minutes on each side, or until it turns golden brown and is done all the way through. Take the pancakes out of the pan and put them on a plate lined with paper towels to soak up any extra oil. Put your favorite sauce or yogurt on top of the warm quinoa pancakes and serve them. Enjoy your tasty and healthy Summer Squash Quinoa Pancakes!
