🌟🌟Lemon Pepper Whiting Filets With Red Beans and Rice🌟🌟 . . . To make the fish: . First I put all the Whiting fillets in a Ziploc bag. Next, I put the Ziploc bag in a bowl with cold water. I let that sit for about a half an hour. Or sit until the ice has melted off the fillets and the fillets have dethawed. Then I put it in the fridge for later. . Next I seasoned the fillets with salt, black pepper, garlic powder, and seafood seasoning. I put seasoning on both sides. Put on a thin layer of seasoning so it doesn't get too salty. Then I warmed up one tablespoon of extra virgin olive oil per filet in a pan. I cooked the fish fillets for about 4 minutes on each side. While I was cooking I put about four cap fulls.(four teaspoons) of lemon juice on top of the fish. This absorbed into the fish. . To make the rice and beans: . I rinsed off the rice. Next, normally you boil 1 and 1/2 cups of water for every one cup of rice. This time I boiled two cups of water for every cup of rice. But instead of just boiling water, I substituted a lot of the water for wet ingredients. I boiled one cup of water, one cup of red bean juice, and one and a half cups of chopped yellow onion. I also added one teaspoon of sea salt and five chopped cloves of garlic. After that, I returned the onions to a boil. After that, I added in the one and a half cups of kidney beans with the rice. Then I boiled all the ingredients and simmered for 20 minutes. . So in total, the ingredients were one and a half cups of red beans, one and a half cups of yellow onion, one cup of red bean juice and one cup of water. So it came out till about 5 cups of moisture ingredients. To cook 2 cups of the previously dry rice. .
