Sneak Preview of our Dishes for PIG ISLAND!
Pig Island is now only 1 day away. Are you getting hungry? I know that we are! As many of you know, the Danish (Revolving Dansk) and Asian (Dassara Ramen) forces have combined to bring you not 1, but 2, amazing dishes for Pig Island. 1. Copenhagen Street Dog grillpølser sliders: The first is our specialty mini grillpølser hot dog, that we created specifically for this event. These mini pølse were produced locally, using all natural pork and Scandinavian spices, and then beech wood smoked to perfection. They will be served on top of hand formed mini hot dog buns created by Leske's Bakery, a long standing Scandinavian bakery who has found fame as a “must-see” in New York City guidebooks.
Our hot dog presentation is a gourmet recreation of the typical 'street dog' in Copenhagen, but just a little bit bolder. In addition to our special recipe ketchup, mustard, remoulade, crispy fried onions and Scandinavian sweet pickles, we are adding a twist: a sprinkle of fine imported salty liquorice. This is not the liquorice that American's think of, but fine powdered raw liquorice from Afghan licorice roots that are steamed and pressed, produced by Dane-beloved Lakrids by Johan Bülow.
2. Danish-Asian Flæskesteg sandwich: Next is the ultimate Danish-Asian love child, which is our joint effort to create an Asian-inspired version of the classic Danish Flæskesteg sandwich. It is pork marinated in love, and topped with Danish-Asian awesomeness.
This dish was created as a project to combine the rich heritage of the traditional Danish dish, while adding complexity to the flavor. What we got was the perfect mix of Danish "hyggeligt" and a flavor explosion. Instead of the traditional roasted pork, we chose a juicy, marinated pulled pork. Instead of traditional Scandinavian red cabbage, we infused the red cabbage with Mirin, chili, rice vinegar and a variety of Asian spices, and topped it with ginger and cilantro.
