Unlike champagne where a mixture of liquor and yeast is used to produce the second fermentation, here they reintroduce part of the original grape must which has been previously frozen. We have a 100% brut nature sparkling wine made from the starting grapes. On the nose it is very aromatic, a mixture of blood orange and red fruits. In the mouth we find these notes of blood orange. The acidity is not very marked, it is round. There is a certain complexity. It is a sparkling for meal, its dry and aromatic side will do wonders especially on a red fruits or chocolate dessert. 🍾 🍾 Voilà un vin pétillant de Provence fait en méthode traditionnelle. À la différence du champagne ou on utilise un mélange de liqueur et de levure pour produire la seconde fermentation, ici ils réintroduisent une partie du moût du raisin originel qui a été congelé préalablement. On a donc un vin effervescent brut nature 100 % issue des raisins de départ. Au nez c'est très aromatique, un mélange d'orange sanguine et de fruits rouges. En bouche on retrouve ces notes d'orange sanguine. L'acidité est peu marquée, c'est rond. Il y a une certaines complexité.
