Last night I was all pumped up for @alexia_clark’s Friday #queenteam challenge workout, but this morning my body was like “NOPE 👎🏾, you’re doing the most and wearing me out.” Woke up this morning with a sore throat and stuffed up nose. 🤧😷 And I’m like “ughhh WTF FML why...🤦🏽♀️” I rarely get sick these days unless I’m under a lot of stress and well moving is one of those things that cause stress. 〰️ So I got up made a refrigerator quiche/frittata aka use whatever leftovers are in the fridge to whip up some fancy ass breakfast and call it a day. 💁🏽♀️ #whatsonmyplate: quiche-tata with a quinoa crust, @organicgirl super greens, and goat cheese. 😋 I also made a pear/apple smoothie with @organicgirl’a clear greens tea. See my quiche-tata on #IGstories. 〰️ Quinoa Quiche-tata #Recipe: 6 egg whites 2 whole eggs 2 handfuls of @organicgirl super greens 3/4 cup of cooked quinoa 1/8 cup of goat cheese - 1. Take cooked quinoa and warm in a @lodgecastiron skillet or any other oven safe pan on medium/low heat. 2. Mix all eggs in a bowl with a little salt/pepper. 3. Layer @organicgirl super greens on top of the quinoa. 4. Pour eggs into the skillet. *do not mix it into the quinoa green mixture. The quinoa acts as a crust. 5. Toss in goat cheese. 6. Throw into the oven at 375 degrees for 12-15 minutes. 〰️ Pear green tea smoothie recipe: 1 sliced pear 1 sliced apple 1 bottle of @organicgirl Moroccan mint tea 2 handfuls of @organicgirl super greens 1 cup of ice A squeeze of 🍋 - 1.
