Creamy Shrimp Alfredo Pasta 🍝🍤😋

Eat or pass?
Ingredients:
1 lb raw shrimp 🍤 peeled and deveined⠀
1 lb dry linguine pasta 🍝⠀
4 cloves garlic minced⠀
1 red chili (mild) or Habanero (intense) finely diced (optional)⠀
1 tsp sea salt or to taste⠀
1/2 tsp pepper or to taste⠀
6 cups milk (full fat or 2%)⠀
1/2 cup fresh grated Parmesan cheese⠀
a small bunch of fresh chopped basil to garnish
Cooking Directions:
Heat oil in a large skillet over medium-high heat.⠀
Add garlic and chili, and sautee for about 1 minute, until just fragrant.⠀
Stir in the shrimps and cook until pink, about 3-4 minutes. Season with salt and pepper (to taste), then remove from the pan and set aside.⠀
Pour the milk 🥛 in, reduce the heat and bring it to a gentle simmer. Season generously with salt and pepper.⠀
Stir in the pasta and cook (on low heat), while stirring occasionally, until it gets to al dente (about 7-9 minutes). At this point, you can place the lid on, but remember to give it a stir every 2-3 minutes.⠀
Return the shrimps to the pan and sprinkle with Parmesan cheese 🧀 , then mix to combine. (If the pasta is a bit too dry you can add 1/2-1 cup of milk and mix well to combine).⠀
Serve immediately with fresh ground pepper and chopped basil 🌿 .
☀️ Going to miss the days of outside patio eating... seems like this week will be the last nice week till we get hit with the Fall weather 🍁 We got to try @staronbroadway after visiting my Grandpa at Swedish. @koda.bear.pomsky & @jeffgonzales11 were patiently waiting in the car for me since the hospital only allowed 1 visitor per day due to Covid. 😷 Decided to treat ourselves to a nice dinner outside afterwards 🍣 ⠀⠀⠀⠀⠀⠀⠀⠀ Patio was nice and spacious, we got to enjoy our meal outside and Koda was brought a tray of treats & water! PANCAKE SUNDAY 🥞 Thick, fluffy and loaded with protein. You’ve got to try whipping up a batch of these 😁 RECIPE 1 cup flour 1/2 cup quick oats 2 tsp b.powder 1 tsp cinnamon 2 egg whites 1 cup milk (normal or almond) 1/4 cup Greek yogurt 2 tbsp brown sugar 1 tsp vanilla 1/2 cup blueberries fresh or frozen Pinch salt 🥞 MAKE EM’ - Toss flour, oats, salt, b.powder and cinnamon in large bowl. In a separate medium bowl, whisk eggs and milk. Whisk in sugar and yogurt until well combined. - Combine dry and wet and stir gently (go easy, don’t over mix). Add blueberries. - Heat pan with some coconut oil or butter. Drop about 1/4 cup batter and cook for about 1 min. Careful on the flip but if you eff it up who cares!
