Because Levi Lennox, the person who wrote and produced it said so, years ago. And Julian Bunetta confirmed that Zayn played the recorded track for Pillowtalk for him while on tour with 1D.

I don't think my ask with the link about the recording of Pillowtalk went through. You can google Vice Levi Lennox Pillowtalk and it'll come up. Zayn recorded several songs for his solo career while he was in 1D. Pillowtalk was one of them. The song was completely finished while Z was still in 1D and then sat around for 18 months until RCA told the producers Lennox and MYKL that it was going to be his first single. The guy who played guitar on it for them said the same thing.
