This berry sorbet is very cool and tastes great with fresh mixed berries. It's a great treat on a hot summer day or whenever you want something fruity and light for dessert.
Ingredients: 3 cups mixed berries such as strawberries, raspberries, blueberries. 1/2 cup sugar. 1/4 cup water. 2 tablespoons lemon juice.
Instructions: In a saucepan, combine sugar and water. Heat over medium heat until sugar is dissolved, stirring occasionally. Add mixed berries to the saucepan and cook for 5-7 minutes, stirring occasionally, until the berries break down and release their juices. Remove from heat and let the mixture cool for 10-15 minutes. Transfer the berry mixture to a blender or food processor. Add lemon juice and blend until smooth. Pour the mixture through a fine mesh sieve to remove any seeds or pulp. Transfer the strained mixture to an ice cream maker and churn according to manufacturer's instructions until it reaches a sorbet consistency, typically 20-25 minutes. Transfer the sorbet to a freezer-safe container and freeze for at least 2 hours before serving.
