Ingredients: 1 cup raw almonds. 1 cup dates, pitted. 1 cup shredded coconut. 1 cup cashews, soaked overnight. 1/2 cup coconut cream. 1/4 cup coconut oil, melted. 1/4 cup agave syrup. Zest and juice of 4 limes. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: In a food processor, blend almonds, dates, and shredded coconut until a sticky crust forms. Press the crust mixture into the base of individual parfait glasses or a tart pan to create an even layer. In a blender, combine soaked cashews, coconut cream, coconut oil, agave syrup, lime zest, lime juice, vanilla extract, and a pinch of salt. Blend until smooth and creamy. Pour the lime filling over the crust in the parfait glasses or tart pan. Chill in the refrigerator for at least 4 hours or until set. Garnish with additional lime zest or shredded coconut before serving.
