This is a simple but tasty pasta dish made with linguini, ripe cherry tomatoes, and creamy ricotta cheese. It's quick and filling.

Ingredients: 8 oz linguini pasta. 1 pint cherry tomatoes, halved. 1 cup ricotta cheese. 2 cloves garlic, minced. 1/4 cup fresh basil leaves, chopped. Salt and pepper to taste.

Instructions: Cook linguini according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add halved cherry tomatoes to the skillet and cook until they start to soften and release their juices, about 5-7 minutes. Stir in cooked linguini and reserved pasta water. Cook for an additional 2-3 minutes, allowing the pasta to absorb some of the flavors. Remove from heat and stir in ricotta cheese until well combined. Season with salt and pepper to taste. Garnish with chopped fresh basil leaves before serving.
