Linzer sables as the 27th bake from the 2016 Great British Bakeoff cookbook. Even if the recipe called for a food processor, as I don’t have it here I made everything by hand on the big silicon sheet. I just mixed the dried ingredients, then finely cut in the butter with the cream cheese and crumbed it, then kneaded a bit together with the eggs. The almond flavor and lemon zest makes the cookies really outstanding. I used a big flat spatula to transfer the just cut and just baked cookies too. I had a good raspberry jam already, so I didn’t need to make one this time. The whole bake disappeared in a few hours, the recipe is a definite keeper.
