- Hardest aspect of his job: "Trying to keep a happy face when you are under a little bit of stress."
- Where he thinks the food industry is headed:
"More towards the healthy side... I think it’s headed in the right direction. Even if you go to McDonalds today.. I heard a commercial last night about how McDonalds is now salad... If you just go onto Thayer street... And you go over to Au Bon Pan there is a sign (advertising their food being healthy) ...what’s that all the sudden at ABP.”
- His life before Louis: “I went to NYU... and then I did a stunt in Tanzania, East Africa. It was a volunteer program... Then I went back to the city and worked at a bunch of nonprofits for numerous years... then I did the Peace Corps in haiti... Then I came back here and I’m in Providence because my family... I’ve traveled a lot... I did a lot.”

For my personal project I chose to interview workers from the restaurants Louis, and Abyssinia. Below you will find some general information about the restaurants, interviews, and my process.
Louis : General Facts
Located at 286 Brook Street, Providence, RI.
Has been open since around 1946
Serves "good homestyle food."
Showcased on the television show, Diners, Drive-in's and Dives.
Hours: 5am-3pm, daily.
A late-night, early-morning favorite for the college crowd.

Abyssinia : General Facts
Located at 333 Wickenden Street, Providence, RI.
Has been open since March 2011.
Serves traditional Ethiopian and Eritrean food.
Hours: 11am-10pm.
An international experience for those wanting to venture slightly off-campus.

The Interview Process:
For this research project we had to follow a specific a specific protocol when finding and conducting each interview. After gaining approval from the manager and signing a consent waiver each subject was scheduled for an interview. My first interview, with Nick, was at Louis and my final one was with Gary, from Abyssinia. Each interview was recorded with and audio recorder and all, except one, was done during the normal working hours of the restaurant. They were each asked the same set of questions and the interviews generally lasted about twenty minutes. The stories revealed from each interview were fascinating, insightful, and at times hilarious.
