Slice the plantains in equal parts and fry until golden brown. Lightly fry the mushrooms. Lay the plantain in an olive oil greased baking tray and build the layers of tomatoes, mushrooms, beef and cheese. Repeat by building a second layer and sprinkle with black pepper. Place in oven for approximately 30 mins at 200°C.
