A keto-friendly version of the classic Okonomi sauce, perfect for adding flavor to sushi without the added sugars.
Ingredients: 1/4 cup coconut aminos. 2 tablespoons rice vinegar. 1 tablespoon erythritol or monk fruit sweetener. 1 tablespoon tomato paste. 1 teaspoon sesame oil. 1/2 teaspoon grated ginger. 1/4 teaspoon garlic powder. Pinch of xanthan gum optional, for thickening.
Instructions: Put coconut aminos, rice vinegar, sweetener, tomato paste, sesame oil, ginger powder, and garlic powder in a small saucepan. Over medium-low heat, stir the mixture a few times to make it simmer. If you want to make the sauce thicker, add a pinch of xanthan gum and stir it in. Keep cooking for one more minute. Take the sauce off the heat and let it cool down before you use it. Add your favorite sushi rolls to it.
