Ingredients: 2 medium sweet potatoes, peeled and diced. 1 pound ground beef. 1 bell pepper, diced. 1 zucchini, diced. 1/2 red onion, diced. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cumin. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Heat olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally until they start to soften and turn golden brown. Add the ground beef to the skillet and cook until it's browned and cooked through, breaking it apart as it cooks. Stir in the diced bell pepper, zucchini, and red onion. Cook for an additional 5-7 minutes until the vegetables are tender. Season the mixture with paprika, cumin, salt, and pepper. Stir to combine and let it cook for a few more minutes to meld the flavors. Serve the Paleo Sweet Potato Hash hot, garnished with fresh parsley.
