Tea Cookies
Since I was in junior high school i’ve been really into tea and different blends. I think this cookie recipe is a really fun way to incorporate your practice with an enjoyment for fun blends. You can make your own or buy a loose leaf blend and use it here, so I’ll keep the recipe vague!
1 1/4 c flour 1/2 cup of powdered sugar 1 tsp strong, whole leaf tea blend 7 Tbsp butter 1 medium egg yolk
put flour, powdered sugar, and tea in a food processor until the tea is broken up into small pieces
add remaining ingredients and mix to form a soft dough. Shape it into a disk and wrap in plastic wrap. Let the dough chill for 20 minutes!
Lightly flour a clean surface and preheat the oven to 375F (190C).d Roll to 1/4 inch thick, cut shapes, and place cookies on a baking sheet.
Bake for 8-10 minutes. Let the cookies cool completely. They keep well for a couple weeks in a well sealed container
TIPS:
Don’t handle the dough too much. The heat and oil/salt from your hands will make the dough tough and give it a different flavor profile.
I havent tried it, but i bet you could use herb blends to make more savory versions. Eating the dried herbs right in the cookies might be a little strange to some people lol
