A tasty variation on the traditional grilled cheese sandwich is the BBQ Chicken Grilled Cheese Sandwich. They have soft BBQ chicken, cheddar cheese, red onion, and pickles between two slices of buttered bread. Everything is grilled to perfection. The sandwich is tasty and filling, and it's great for lunch or dinner.
Ingredients: 2 boneless, skinless chicken breasts. 1/2 cup BBQ sauce. 4 slices of bread. 4 slices of cheddar cheese. 1/4 cup red onion, thinly sliced. 1/4 cup pickles, sliced. 2 tablespoons butter. Salt and pepper to taste.
Instructions: Warm up your grill or grill pan on the stove over medium-high heat. Add salt and pepper to the chicken breasts, and then cover both sides with BBQ sauce. As long as the chicken breasts are cooked all the way through and have a little char on each side, they are ready to be served. Add more BBQ sauce if you think it needs it. Take the chicken off the grill and give it a minute or two to rest. Cut it into thin strips after that. Each piece of bread should have one side brushed with butter. On the side of two slices of bread that hasn't been buttered, put a slice of cheddar cheese. Put the pickles, red onion, and sliced chicken on top of the cheese. Put the last few slices of bread on top, with the buttered side facing outward. Cook the sandwiches on each side for two to three minutes, or until the bread is golden brown and the cheese melts. I use a grill pan. Take the sandwiches off the heat and let them cool for one minute. Then cut them in half. If you want, you can serve it hot with extra BBQ sauce to dip it in.
