Fried Zucchini:

Take a zucchini and cut it into thin slices (use a mandolin if you have one). Put some flour on a plate then crack and egg into a bowl and whisk it. Dip your zucchini slices into the egg then dredge them in the flour and put them in a pan of hot oil of medium high heat. Fry until golden brown and then flip over. Put them on a couple paper towels to drain off the excess oil and sprinkle with salt. You can eat them plain or dipped in marinara sauce. They are seriously delicious.
