im gonna go with wines i like because i like all cheese so its a little tough to narrow that shit down when its like ALL CHEESE IS SCRUMPTIOUS
so uh
yeah alright here we go
PORT. my god i love port but port doesnt love me (ask my gf about the whole bottle excursions i used to go on.) port goes really well with blues, especially pungent ones because port in of itself is a strong lass and needs a strong cheese to counteract the sweetness. sweet and salty go really well together. and im talking unoaked port, not tawny port (i mean tawny port is great in its own right but that oakiness can throw a wrench in things so be careful about it.)
also its probably what shithead mcmoneybags here is drinking since he really likes gorgonzola and thats an A+ optimal pairing for port (i would say he probably drinks some fancy garbage ruby port but i mean he’s not drinking it in a port glass so who the fuck knows.)
MOSCATO. i’m trash and like sweet wines a lot so sue me. i go with gorgonzola dolce or mountain gorgonzola. its a really punchy soft blue from Italy, creamy and delicious. unlike a lot of blues you’ll find, which are wedge-like in shape and dont really ripen with age in a visible way, these gorgonzolas actually look a lot like brie. once again, sweeter wines demand salty, pungent cheese to stack up to them, you could probably get away with getting cambozola (black label) which is one of my all time favorite cheeses.
PROSECCO. sparkling white wine from Italy! i pair it with brie, sometimes triple creme bries (which are the most luxurious bries as their fat content is higher, it will say right on the label if its triple cream, and you can usually tell as the cheese will be “oozy”) orrr a cheese thats light and lively and fresh, like the wine (bubbly!) off the top of my head i’m thinking Humboldt Fog, which is a goat cheese with a line of vegetable ash through the middle. its got a nice fresh taste but with a stronger aged rind, which makes it a wee bit funky and good for holding up to a prosecco.
um i could go on for a long while about this so i’ll stop lmao but like… the rules for cheese and wine pairings are generally
1. dont let one thing overpower the other. if you have a soft, delicate cheese, dont get a super bold red to go with it, the flavors will be drowned out.
2. acidity loves sharp cheese, just as mellow wine loves creamy cheese. remember that wines have different acidity, oakiness, etc. prepare for that by reading labels and such.
3. EVERYONE IS DIFFERENT. what you like a lot together might not be the “preferential pairing” and thats totally groovy. the best thing to do if you have no clue is to ask a wine specialist, and then ask a cheese specialist. they might have very different things to say, but thats ok because most likely they will also have insight! also, ask the internet! a simple google search will give you a rundown of basic cheese and wine pairings so you dont feel like a total boober walking into a store.
4. there are literally thousands of wines to choose from in each category, and each is unique. shop around. $$$$ doesnt exactly mean quality either! ive bought some super nice wines from gas stations, i dont even care.
