In multiplayer, if a player casts a spell (I'm thinking of a non-permanent spell like Doom Blade) and then dies (goes to 0 life) while the spell is still on the stack, does the spell resolve?

No.

When a player leaves the game, all cards they own leave the game with them. Any non-card objects they controlled on the stack cease to exist.

How do Pack Rat and Scarab God/God-Pharoah's Gift interact?

You’ll get a Pack Rat token that’s always 4/4 and is a Zombie. Any copies it creates will also be always 4/4 and Zombies. (The tokens also don’t even have Pack Rat’s first ability that defines its P/T.)

If I have an effect which deals one damage to each opponent and I have two opponents and one of them has a planeswalker, can I still redirect the damage to that planeswalker or does it not work because it wasn't 'target opponent'?

Whenever a spell or ability you control would deal noncombat damage to an opponent, you can redirect that damage to one of their planeswalkers instead. It doesn’t matter if the source of the damage is targeted or if it’s damaging multiple opponents or creatures, you can still redirect the damage that would go to your opponent to one of their planeswalkers.
