Ancient Grain Bites with Smokey Corn Salsa
Serves:
Ingredients: Ancient Harvest Culinary Ancient Grains (Spanish Style) 1 box
Flax Seeds 1 Tbsp
Cold water 3 Tbsp
Quinoa or GF AP four 2 Tbsp
Garlic,minced 1 clove
Nutritional yeast 2 Tbsp
Salsa:
Corn, cooked, cut off the cobb 5 ears
Garlic, minced 4 cloves
Red onion, small dice ½ ea
Green onions, green parts only 2 ea
Cilantro, chopped ¼ cup
Jalapeño, diced & seeds removed ½ ea
Roasted Red Peppers, chopped ½ cup
Apple cider vinegar 2 Tbsp
Hot sauce to taste
Smoked paprika 2 tsp
Limes, zest & juice 2 ea
Salt and pepper to taste
Method of Preparation:
1. Gather all ingredients and equipment.
2. Cook ancient grains to package instructions. When finished, set aside to cool.
3. Meanwhile, soak the flax seeds in cold water.
4. To make the salsa, combine all ingredients, cover, and chill.
5. Add the cooled cooked ancient grains to the flax seeds and water. Add flour, garlic, and nutritional yeast.
6. Form into small patties with wet hands. Add more flour as needed if too sticky to work with.
7. Set patties aside and set in fridge and allow to set for <10 minutes.
8. In a hot non-stick pan, add minimal cooking spray. When the pan gets hot (test by flicking with water- if it reacts- it’s ready!), brown the patties until golden and crispy on each side (~2-5 minutes).
9. Serve ancient grain bites with smokey corn salsa on romaine or bibb lettuces for a refreshing and light summer time side.
