Mama D made this colorful black bean and corn salsa dip with lots of love. It's full of healthy ingredients and fresh flavors. You can bring it to parties, picnics, or just about any time you want a tasty snack.
Ingredients: 1 can black beans, drained and rinsed. 1 cup corn kernels, fresh or canned. 1 small red onion, finely diced. 1 red bell pepper, diced. 1 jalapeno pepper, finely chopped seeds removed for less heat. 1/4 cup fresh cilantro, chopped. 2 cloves garlic, minced. Juice of 2 limes. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a large bowl, combine the black beans, corn, red onion, red bell pepper, jalapeno pepper, cilantro, and garlic. Add the lime juice and olive oil, then season with salt and pepper to taste. Stir well to combine. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve as a dip with tortilla chips or as a topping for tacos, salads, or grilled meats.
