🎒 roasted carrot and chickpea quinoa salad A bowl of food that doesn’t make a fuss, but makes the most satisfying lunch [also makes a pretty tasty dinner too, though!] and is sure to win over any carrot haters out there 🥕 Ingredients (serves 3) 2 tbsp extra virgin olive oil 300g carrots of choice 100g dried quinoa 500ml vegetable stock 1 tin chickpeas, drained and rinsed 1/2 tsp garlic granules 1/2 tsp paprika 1 tsp corn starch 2 handfuls kale, chopped Pinch of salt Handful of chopped, toasted walnuts [optional] FOR THE TAHINI LEMON DRESSING 3 TBSP tahini Juice of 1 lemon 3 tbsp extra virgin olive oil 1/2 tsp garlic granules Pinch of salt Pinch of pepper 3 tbsp water Method 1️⃣ Begin by preheating the oven to 180c. If you’re using ‘regular’ carrots, trim off the ends and chop into bitesize pieces. If you’re using chantenay or other smaller carrots you can keep them whole. Place them onto a baking tray, drizzle with 1/2 tablespoon of olive oil and place into the oven for 25 minutes, until golden and caramelised. 2️⃣ Meanwhile, combine the drained chickpeas with the garlic granules, paprika, corn starch and 1/2 tablespoon of olive oil. Scatter onto a baking tray and place in the oven for 20 minutes to roast and crisp up. 3️⃣ Whilst the carrots and chickpeas are roasting, boil the vegetable stock in a pan on a medium heat and add the quinoa. Cook for 20 minutes. 4️⃣ Next, place the chopped kale into a bowl, add a pinch of salt and the remaining tablespoon of olive oil. Massage using your hands to infuse with the oil and soften. 5️⃣ Prepare the dressing by combining the ingredients in a bowl or blender. The tahini will become thick when you first add the lemon juice and water but keep mixing and it will loosen. If you want a runnier dressing just add more water, little by little. If it becomes too thin you can add a little more tahini 6️⃣ To assemble, combine the kale with the cooked quinoa and line the 3 lunch boxes. Add the cooked carrots and roasted chickpeas, drizzle over the dressing and garnish with the chopped, toasted walnuts if you like.
