baked maple chicken with creamy bean & cheddar mash
This recipe of baked maple chicken with creamy bean & cheddar mash might look like a bit of a plain Jane but…looks can be deceiving. The chicken is cooked in a maple, mustard & rosemary sauce that forms a glaze as it bakes. Then it’s served with a mash to rival the best mashed potatoes you’ve ever eaten. Promise.
Beans – (I’m talking legumes here), when consumed are slowly released into your…

Firsts and Fiascoes
The first of the "firsts" I should mention (hey, I know what you're thinking! - get your minds out of the gutter...) is this tumblr. Yes, it's my first tumblr, but not my first attempt at blogging. Tried that. Failed at it. Guess my incurable attraction to social media sites is inevitably coupled with my lack of commitment to them. We'll see how this little foray goes. Anyway, this experiment involves another experiment: cooking. This summer I've been testing out a variety of recipes and concocting some of my own. Honestly, I used to abhor being in the kitchen for any reason other than devouring a meal. Hell, I loved to eat, but I hated everything about cooking - it required too much patience and too much time and too many measurements. And then things changed, and rapidly! I graduated college, moved out of my parents' house for a six week training period for my job, and had to find nutritious and convenient ways to feed myself. I also met a boy. Not just any boy. An amazing boy. A starving artist, who was, well, always starving. Boom! I had the perfect combination of necessity and affection pushing me to give cooking another chance.
So here I am. A would-be, whimsical home-cook. Now for the rest of the "firsts." Last night I grilled for the first time - a maple chili marinaded chicken that I'd cooked stove-top style on Sunday night with Mr. A (see Starving Artist above). You can check out the recipe here http://whenthedinnerbellrings.blogspot.sg/2011/06/super-easy-way-to-getting-meals-ready.html. Tender, juicy, and slightly caramelized from the maple syrup, it's an excellent summer chicken dish especially when served with a side of fresh veggies or grilled corn on the cob - which is what I did. If you want to give it a go, peel the husks back halfway and remove as many of the silks as possible. Fold the husks back over the cob; soak them for 1-2 hours. Heat your grill to 550 degrees Fahrenheit, place the corn directly on the grill and cook for 15-20 minutes, turning them every 5 minutes. Let the ears cool for 10 minutes, shuck them, and for even more gastronomical delight, serve with garlic butter (recipe below). Who knew grilling corn was that easy?!
As far as fiascoes go, I attempted to bake vanilla cupcakes with strawberry buttercream frosting the other night. You can get the recipe here (let me know if you fare better) http://confessionsoftart.blogspot.com/2011/03/cream-filled-vanilla-cupcakes-with.html. I suppose trying to bake anything at 11 PM is a ridiculous idea, but the kitchen gods were beckoning me - or maybe that was just the naivety speaking. The cupcakes emerged from the oven as pale little domes of sweet goodness. The frosting, however, was an absolute disaster. I think I added too much strawberry puree to the butter mixture because it ended up curdling the butter, becoming a chunky, bloody mess! Imagine Lady Gaga's meat dress ground up and spread over cupcakes - horrid. I only frosted a few cupcakes before I pitched the frosting down the drain. The cupcakes were better off naked than clothed in that crap!
Long story short, I made some frosting from scratch the next day using 1 cup of melted semi-sweet chocolate ships, 1 1/2 cups of powdered sugar, 1 1/2 tablespoons of instant coffee, 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract, and a stick of butter. I creamed the ingredients together until the mixture had a nice, smooth consistency. The frosting could have been thicker, but the flavor was awesome. And thus Mocha Cupcakes were born!
That's it for now! Stay tuned for more triumphs and disasters.
