The maple wine has cleared! It's pretty dark; you'll notice I had to shine a flashlight through it in this photo to show how clear it is. Still a bit of a haze. I used coconut water instead of regular water so this is probably as clear as it's going to get. If I'd used regular water it might it would probably look clearer than this. In any case, it tastes clear. No detectable yeast flavor. I'm going to go ahead and rack it soonish.
The flavor is more complex than the last time I tasted it. The toasted woody flavor is stronger. It tasted pretty dry the last time, but now there's also a bit of a ...tart(?) astringency I'm detecting that wasn't there before. I like it, but I think it could use another month of aging to mellow out a bit.
