Ingredients: 1 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/4 cup pure maple syrup. 2 cups all-purpose flour. 1/2 teaspoon salt. 1/2 teaspoon vanilla extract. 1/2 cup heavy cream. 1 cup powdered sugar.
Instructions: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the pure maple syrup and vanilla extract to the butter mixture. Mix until well combined. Gradually add the all-purpose flour and salt to the wet ingredients, mixing until just incorporated. Form the cookie dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out the chilled cookie dough on a floured surface to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes. Place the cut-out cookies onto the prepared baking sheet, spacing them about 1 inch apart. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form. Once the cookies are completely cooled, spread or pipe the maple cream onto the bottom side of one cookie, then sandwich it with another cookie. Repeat the filling process with the remaining cookies.
