My dad’s creamy mashed potatoes are simple but different – completely smooth and packed with lots of dairy to give them a super creamy texture!

Sausages, champ and caramelized onion gravy.
Quick and simple food, but so tasty and filling. Serves 2. 839 cals per serving.
Ingredients-
1 baking potato
1 small sweet potato
4 pork and oregano sausages
150g spring greens
80g red onion chutney or marmalade
1 beef stock pot
30g butter
50ml water
Step 1- boil a kettle of water. Chop your baking potato into small chunks ( no need to peel) add to a saucepan. Peel and chop the sweet potato into small chunks, add to the pan , cover with the boiling water. Cook until you can easily put a knife through them. Put the sausages on a baking tray, place in the oven on a high heat, until cooked through.
Step 2- when the potatoes have been cooking for about 10 mins, add the spring greens . Meanwhile pop the red onion chutney in a pan , add the water and beef stock, simmer until the sauce starts to thicken a bit, place on a low heat.
Step 3- when the potatoes and greens are cooked, drain and add in the butter. Add a sprinkle of pepper and mash. Serve with the sausages and sauce. Enjoy.
