What Makes You Berryful Grain Bowl
This colorful and healthy dish is adaptable to whatever ingredients you like/have on hand and scalable to however big a group you are feeding.
Red Wine Vinaigrette - make your own or use store bought. Here's a quick recipe
Grain of choice, cooked - Rice, Quinoa, Farrow, etc.
Greens of choice - Lettuce, Spinach, etc.
Raspberries or Strawberries
Yellow bell pepper (or other yellow food such as mango, yellow cherry tomatoes, etc.)
Broccoli, chopped fine (or other green food such as peas, edamame, pepitas, etc.)
Green Onion, chopped fine
Pear, cubed (or other white food such as radish, cucumber, white beans, etc.)
Sweet Potato, cubed and roasted (or other orange food such as shredded carrots)
Prepare dressing (if making homemade) and set aside.
Roast the cubed sweet potato. (I tossed mine in olive oil, honey, and a mix of seasonings, then baked until soft.)
While sweet potato and grain are cooking, wash/chop other ingredients as needed.
Mix cooked grain and greens in the bottom of a bowl.
Arrange the remaining ingredients on top.
Drizzle with Vinaigrette, toss to coat and serve immediately.
