2 TSP BUTTER (I used Earth Balance Natural Buttery Spread)
2 TBSP ALMOND MILK OR COCONUT MILK BEVERAGE (not from the can)
1 BULB OF GARLIC
1 TBSP OLIVE OIL (or any type of oil you prefer)
SALT AND PEPPER TO TASTE
DIRECTIONS
Bring a pot of water to a boil.
Prepare the carrots. Peeling them is optional. Chop off both of the ends, then cut them in half and place in pot full of boiling water. The water should hit just above the carrots.
Boil the carrots for about 25 minutes or until soft. Just like making mashed potatoes.
Prepare the garlic by chopping off the top of the bulb. Drizzle with olive oil over foil and wrap. Place in a 400°F oven for 20 minutes.
Place carrots and oven roasted peeled garlic in a food processor. Add butter, milk, salt, and pepper.
Blend the until the mixture is well... like baby food.
Give it a taste and add more salt or more pepper as desired.
