This matcha spaghetti is a unique take on the traditional Italian dish cacio e pepe. It gives the dish a bright green color and a light earthy flavor. Matcha, pecorino romano, and parmesan cheese, which are all sharp, are mixed together to make a creamy and rich pasta dish.
Ingredients: 200g spaghetti. 2 tbsp matcha powder. 1/2 cup grated pecorino romano cheese. 1/2 cup grated parmesan cheese. 2 tsp freshly ground black pepper. Salt to taste. 2 tbsp olive oil.
Instructions: Follow the directions on the package to cook the spaghetti until it is al dente. Add 2 tablespoons of hot water to a small bowl and mix the matcha powder to make a paste. Set aside a large skillet and heat the olive oil over medium-low heat in it. Put the matcha paste, pecorino romano, parmesan, and black pepper in the pan with the cooked spaghetti. Mix it all together until the cheese melts and covers the spaghetti all over. If the sauce is too thick, add a little pasta water to thin it out. Add salt to your liking. If you want, you can serve it hot with extra cheese and black pepper on top.
