I did a first round of seasoning on my new Matfer carbon steel pan. I did it their way this time, and it worked about the same as my way. Their way involves sauteing oil, salt, and potato skins for about 15 minutes, discarding, then doing it again. I think my way would have gotten a more even season.

My way is a few shorter sessions at higher heat with thin coatings of high smoke point oil
