Spicy White Fish Pilaf
A cheaper twist on Asda’s recipe
2 Frozen white fish Fillets
Oil
1 onion, chopped
1 garlic clove, chopped
3-4 level tsp Mild Curry Powder (cumin and Graham Masala will also work)
rice
Two handfuls of chopped spring greens
handful of frozen peas
half a lemon
Pre-heat the oven to 190C/170C Fan/Gas 5. Put the fillets in a small roasting tin with 3 tbsp water, cook for 20-25 minutes
Meanwhile, heat the oil in a pan and fry the onion until it's soft and starting to turn brown. Add the garlic and continue cooking for another minute.
Add the curry powder and 2 tbsp cold water and stir over a low heat for another minute. Stir in the rice and add 600ml cold water. Season, bring slowly to the boil, then cover and simmer for 8 minutes.
Add the spring greens and peas and stir once. Heat until simmering again, then cover and simmer for another 3-4 minutes or until the rice is cooked.
Break the fish into large flakes and add to the rice with the lemon juice.
