Beetroot meat stew
I've invented a delicious stew recipe and I want to brag about it. Took me an hour or two to get everything in the casserole dish, followed by several hours in the oven, but I’ve been eating it two meals per day for four days and there’s another five or so portions of it frozen.
Equipment:
Oven
Large casserole dish
Large frying pan
Stovetop
Chopping board and some sharp knives
Ingredients:
1kg diced lamb shoulder, or other high-fat high-gristle red meat, whatever’s convenient
1kg good canned tomatoes
400g tomato paste
3 beetroot
Head of garlic
Tablespoonful of hot chilli powder
Tablespoonful of soy sauce
Cup of red lentils, washed
Several stalks of rosemary and thyme, washed
2 lemons
2 large bunches of parsley
Bit of oil for frying
Your favourite type of noodle (I recommend udon)
Method:
Preheat oven to 100 C (212 F).
Heat oil in frying pan over high heat. Shallow-fry lamb bits until all of them have brown crispy areas on the outside (may need to do this in batches if they don't all fit in the frying pan at once.) Transfer browned lamb bits to casserole dish.
Put tomato paste in hot saucepan and fry it while stirring until it darkens visibly, then put it in casserole dish.
Add canned tomatoes, chilli powder, soy sauce, lentils, rosemary and thyme (put the whole stalk in, you can pick the sticks out later) in the casserole dish. Mince the garlic. Dice the beetroot into 1cm cubes. Put those in the casserole dish too and stir it all together.
Put casserole dish in oven and wander off.
Once an hour, take dish out of oven and stir it. It's cooked when you can shred the lamb bits with two forks (4-6 hours)
When cooked: chop up the parsley leaves and stalks, peel the outer zest of the lemons and mince it finely, add parsley and lemon zest to hot stew and stir it in. Then stir through the stew to find all the lumps of lamb, shred each lump with two forks, and fish out any gristle that hasn't dissolved and the sticks from the herbs.
Boil noodles. Put a couple of tablespoons of stew on top of each bowl of noodles. Make some reheatable lunch packs with a Tupperware container, stew, and leftover noodles.
Calculate how much stew your family wants to eat over the next five days (underestimate, because throwing stew out is just sad). Put that amount in the fridge and freeze the rest in little containers.
